I know skipping breakfast is recommended. Is it just as important to avoid an evening snack because it would reduce the amount of time without food over night, or is breakfast more significantly important to go without?

Yep, the evening snack is like breakfast - best avoided to keep fasting state until lunch next day. Honestly, it's bad to go over 3 meals a day (and you can consider one of those meals a snack).

I think it depends on how long your fast is total ? 12 hours minimum to 16 hours maximum is recommended. As maiden said, limit yourself to 3 "meals", but if you are already skipping breakfast having lunch, dinner, and night snack is fine as long as you wait until 12-16 hours to eat the next day.

Thanks. That makes sense. I usually eat at around day midday and 6pm, but often would like something before bedtime 10 or 11 pm.
Is 12 hours plenty, or is longer better?

I personally have a 14-16 hour fast with my first meal whenever that time is up, no matter if it is sometime in the morning. I find this easier for me, because I ALWAYS ate a snack/meal sometime after 7-8pm with my boys. I just make sure to not eat right when I first wake up, and I change up the time to keep my body guessing.

Both 2 or 3 meals are allowed on LE, it's about what works for you.
We don't know how long is "plenty", this is all just largely guesswork.
At the end of it all, you have to do what you can LIVE WITH. If you're miserable, white knuckling it through every minute of every day, starving and thinking about swaying the whole day then that's a recipe for cheating and swaycession (let alone that life is too short to be in misery!) Do the doable. "She who reaches for the stars often ends up flat on her face."
I always had a bedtime snack because I couldn't sleep otherwise, still got a girl.
