I read the LE diet today and I am not sure how I am going to do this being vegan and staying healthy.
I am used to ensuring enough nutrients through soy tofu coconut milk and tons of veggies, any and all. Basically nutrient dense foods. How do I make the switch??? Anyone who's been through this? Tips would be greatly appreciated!! Thanks in advance!!!!

Yes tons of people did LE vegan. It actually makes it easier in some ways.

The LE Diet is just what I think will work for most people most of the time, it is fine to deviate from that.

Low carb vegetables are FREE meaning you can have as much as you want, no limit, no need to count in totals for the day. You have to eat a literal mountain of broccoli before you get the amount of nutrition in an Amy's entree. :)

YOu can still have the soy coconut milk, you'd just have less to fit in the diet limits. There are no magic foods, just overall diet.

What I would do is focus on legumes, nuts, soy foods (but don't go too crazy with them), fruit, veg, rice, higher carb veg. It's all good! :)
