Maybe someone on a different device would have more luck, but I can't blow your images up enough to actually read them. It might work better to type out your totals?
Looks like 30 grams of fat, 35 grams of protein, and 1156 calories? That's a little low, I would personally try to get it up to LE minimums.

I'd eat just a bit more to get up to 40+ g protein and 1200+ cals. Wouldn't take much.
Can you be more specific about what problems you're having? Can't get enough, are you hungry still, etc??

You don't have to eat the crap. ;) There are plenty of healthier options that can get you to your totals.

OH yeah we can do way better than that!!!
Low carb veg are free and unlimited on LE Diet, you can have as much as you want with no need to count them. For higher carb veg (like potatoes, corn) and fruit, you count ONLY cals. no counting fat or protein in them. So you can actually have tons of fruit and veg on LE Diet. You may want to pick lower nutrient ones like cauliflower and apples most of the time, nbut you can still have whatever you want.

I ate tons of baked potatoe with sour cream with my girls! I'm thrilled I can have them!!! Yessssss!!!!
I'm assuming lite sour cream is best?
Chives ok?
-skip the butter?
I sometimes put BBQ sauce on them too but I can skip that if it's an issue

You need to eat the foods that are going to meet your diet needs. You can have sour cream or butter if you need fat. If you don't need fat, then you may want to do the light kind. Margarine may be a little more pink friendly than butter (but I always ate butter!)
I ate tons of baked potatoes when I was swaying and yes I did put BBQ sauce on them.
chives are fine

I've been having my baked potatoes with olive oil and plain yogurt or low fat sour cream. :)
