How could you do the low everything diet and skip breakfast if you’ve got type 1 diabetes? Won’t it mess up your sugars too much?

You don't do the full LE Diet and don't skip meals with T1D. I would have a person with T1D make other changes in diet (all of which would be beneficial anyway, like whole grains, lean meats, fruit and veg as is appropriate for them) and focus on number of attempts and exercise if they can do exercise. :) Some of the medications they are often on tend to sway pink anyway.

So not going vegetarian/vegan? I know you’re trying to keep blood sugar low but obviously that’s a big tricky with diabetes. Still no snacking?

I can't recommend any diabetic do anything any different than is correct for their disease. I would have them put the needs of their body first and foremost and would not ever recommend that they try to avoid snacking since snacking is necessary for many diabetics to function.

Whole grains, fruits and vegetables, lean meats, healthy fats will be good for diabetes and for a pink sway so that's what I'd have people focus on. A lot of the stuff would have to fall by the wayside, but it gets made up for by their medication.
