View Full Version : Butternut Squash on the LE diet

Hi,

Is this one allowed and if so, how often, i.e. is it low, medium or rich in nutrients?

Also, if you eat it, what do you do with it?

I eat butternut squash on the diet. I just cut it in half, scoop out the seeds, and roast it in a 400 degree oven for about an hour. I then scoop out the flesh and puree or mash it then keep it in a container in the fridge for future use. I often just mix it in with my pasta - 1 serving of pasta mixed with maybe 1 cup of squash + parmesan - it's actually quite yummy and my kids love it too! I also have a great recipe for squash risotto I've used while not TTC that I think I may adapt for the diet. It does have broth in it - I will use no salt added chicken broth but you could also use vegetable broth I'm sure. I can try to dig up the recip if you're interested.

Of course now that I'm looking for that recipe, I can't find it. But when I googled it, I found this one, which looks great for the LE diet because it uses vegetarian broth and uses leeks instead of onions:

I'm sorry, I started to repoly to this and got interrupted.

I consider butternut squash to be a moderate nutrient food, it's certainly allowed in moderation, just as long as you're staying ithin your caloric intake for the day and not living on the stuff.
