Hi,
As the title says.
I am doing the LE diet and so far I have only filled them with cucumber and cottage cheese, but would be interested in some more ideas, especially heated up.

Hummus and cucumber is AWESOME. I eat it all the time and I am not even swaying.
There are sev. recipes in the DM section as well.

I made amazing vegetarian tacos the other night. First of all, use corn tortillas if you can find them - the ones I have are sodium free!
This recipe is nice as a treat once in a while, since it contains some ingredients that we shouldn't have on a daily basis.
Here's what I did:
Sauteed 1 leek and 1 yellow pepper in 1 T unsalted butter until soft, added 1 cup no salt added canned black beans, 1 cup no salt added canned tomatoes, 1 tsp chili powder and a bit of cumin + a bunch of fresh cilantro, and let it simmer. Then I heated my tortillas and filled each with about 2 TBSP of the mixture, some cheddar cheese (one 30g serving will top up to 3 tacos if you use it sparingly) and fat free plain yogurt.
Soooo yummy and I had tons left over for another supper or two. I was able to eat a generous portion and still keep well within the guidelines for protein, sodium, and calories for the day.

i do a little white rice and sauteed peppers (i add some type of spice while cooking) and a dap of light sour cream.

I liked Cucumber, a few Sugar Snap Peas, a few slices of Red Bell Pepper, 1 sliced hard boiled egg, and 1 tbsp of Seseame Seeds.... DS1 ate one too and he is my picky no eat veggie boy. I did have a friend make a ton of NO fat and Sodium torillas for me and it was worht because they tasted so much better then store brands.

I do something similar w/mine. I also mix the plain yogurt w/a little bit of chipotle powder and if I'm feeling like I need to cheat a bit, I sprinkle a smidge of onion powder in there as well. Not brave enough to put garlic powder in there but when I'm not swaying, I do and it's divine!

Another thing to try:
Grill some zucchini (courgette), yellow squash and sliced portobello mushrooms. Put them on your girl sway-friendly tortilla and top w/just a bit of parmesan or pecorino-romano cheese.

I used to use them as a Pizza base - I'd roast some veggies and add some low sodium tinned tomatoes, pile it on top with some cheese and melt it all under the grill, which made the edges of the tortilla wrap crispy too. Ooh, I could eat it now!

Out Of The Blue, are the portobello mushrooms okay then on the LE diet as I thought we can only have "normal" white mushrooms. Also how about chillies?
Zanacal, so you just use one tortilla and add the toppings? As you are in the UK too, where did you get your low sodium tomatoes and what cheese did you use? Congrats on your pink news!

The Napoli tinned chopped tomatoes only had a trace of sodium - for cheese I can't really remember! At some point I ate parmesan, mozzarella, feta and cheddar - so long as they fit in to my daily allowances and never much at a time!

Just out of interest, how often did you eat tomatoes approximately while on the diet?

Probably a couple of times a week - I had a jar of kids tomato sauce from Tesco (the one with Micky Mouse on the jar!) most weeks and that lasted a couple of days and the occasional meal like the one above. I actually feel that if you're sticking to the other limits of the diet (cals/protein/sodium), it's impossible to get too much of the other things you're not counting (fat/potassium etc.).

I think portabellos are okay...I was under the impression that the more gourmet kind like shitakes were the ones to avoid. I've never considered portobellos to be gourmet but now you're got me wondering...I'll try to find out. In the mean time, does anyone know if they're okay?????
Regarding the chilies, they're okay in moderation...key word is moderation!

I guess it depends what you eat them with! Our favourite is fajitas - with lots of vegetables, chicken, spices, salsa and grated cheese which I imagine is great for blue (and I eat 3 or 4 at a sitting!).

Okay...Here's the situation w/portobellos:

YIKES!!! Are portabellos considered "gourmet"? They've been showing up in quite a few of my meals recently...
And her response was this:
They are, but since I originally wrote that I have really relaxed my thinking regarding the nutrients in vegetables. You would have to eat SO MANY portobello mushrooms to get the amount of nutrients in a steak or vitamin, it would pretty much be impossible to do. Plus as long as you're getting 1500-1800 cals there is very little way you're getting anywhere near a blue level of nutrients even if you eat them every day.

They're only on the girl diet if we can work them into our daily levels of cals, protein, sodium, etc. Some work well for girl swayers but most types I've personally encountered tend to be very high in sodium and sometimes even in protein. I would think you could definitely work then into your diet, Hobber!

You bet they can be boy friendly! Remember, no magic foods, it's what you DO with those foods in your diet overall that counts. Protein + carbs = boys so if you put lots of meat and/or beans in those tortillas, it's blue heaven!!

Don't forget, on ALL three pink diets you need 2500-3500 mg potassium daily for your health. DON'T go below this number. Tomatoes (even every day) can help you meet your potassium requirement for very few calories. There are no magic foods!!

Oh and for pink swayers I have found that Calidad brand soft taco tortillas have only 130 cals and are not terrible for sodium.

Weight Watchers were the lowest in everything in the UK - Tesco Lighter Choices not too bad either!

I just put egg whites and a piece of low sodium cheese in a corn tortilla. The tortilla had 110cal and 10mg sodium!

LE Dieters can also at a T or two of salsa to an egg white and cheese taco! only 20 cals and adds so much flavor.

just scramble it in a tiny amount of unsalted butter or else canola. Good source of protein if you need it.

I use the pam spray. Really simple, quick spray. You can make them scambled or like an omlette and add a slice of low sodium cheese.

With Pam and otehr similar sprays, just be aware that you must spray exactly the amount as described on the label or it begins to load up on fat and calories. It says "0" on the label, but that's only for a small amount of spray - if you spray it longer, the fat and cals do start to add up. The government allows them to round down the fat/cals to zero, but they really DO have fat and calories in them and if you spray them longer than the label tells you to, the fat and cals start to amount to something.
