View Full Version : Low carb Vegetables - how much is too much?

I love veggies and now that I’m avoiding meat (can’t seem to keep my protein with the limits unless i completely avoid it) I am eating lots more - last night I had a veggie burger with half a head of broccoli, lots of silver beet and green beans. Is this okay or would I be getting too many healthy nutrients? I like to have lots of food volume so if I can’t have quite so much veg I’ll need to add something (low protein) in [emoji848]

There is no "too much". They're free and unlimited, no need to count or track them in any way. Have as much as you like.
When we first started this experiment we assumed that nutrients in fruit and veg might sway. But it quickly became apparent that it was really only calories, protein, fat, and then the highly concentrated nutrients in vitamin tablets and fortified foods that swayed and ever since then we've gotten great results eating lots of fruit and veg.
Think of it like this - you would have to eat a mountain of broccoli before you could get the amount of nutrients in a big mac, fries, and a chocolate shake - not to mention how HARD it would be to eat that much broccoli!
