Does anyone know if all aspects of the LE diet are important in the 2ww or just keeping blood sugar low? I plan to stick to it for the most part but was wondering if its ok to ease up a bit.

Yes keep doing the LE diet in the 2WW for at least first week. We want you to maintain the conditions until the egg has a chance to implant as there's some research that suggests girl embryos implant more favourably in low glucose condition.
Plus you've got to think ahead a little and you don't want to go off the rails in the 2ww as you don't want to ruin NEXT month's sway.
It's FINE to have a few cheats month, just not everyday. I usually plan my huge protein cheats for when I get my AF, one or two big yummy treat meals. I still maintain the no brekky, no snacking thing throughout though. If you're finding it incredibly hard to stick to then you might want to ease up a little as it shouldn't feel like you're white knuckling it through the first half of your cycle.
If you are pregnant then I think the extra nutrients don't matter. The thing to consider is if you are not pregnant a cheat could affect your next attempt. I know it is hard- I was in 2ww during Thanksgiving and totally cheated,but am taking a month off from ttc so I will still have 6 weeks plus of no cheats.
Yes you're right that extra nutrients are good - once you are pregnant. But the egg doesn't even start implanting until 5-7dpo, and you aren't pregnant until after the implantation is complete (another 2-3 days), so the earliest you can consider yourself successfully pregnant is around 9-10dpo.
So we do encourage people to keep up the LE diet for at least the first week of the 2WW, just as extra reinforcement for the low glucose thing we've worked so hard to maintain in the first half of the cycle.
Salt is the absolute best cheat there is, I actually seriously doubt it sways at all because too many people around the world eat gobs of the stuff and still have boys and girls, but I keep it in the diet because it's good for health and easy enough to include.
I did not limit salt whatsoever and still got my DD - with DS 4 I was limiting salt and had a failed sway.
