Ok, I know there is a couple threads already going tracking what you eat every day but what is your go to meal???
So what LE friendly meal do you eat that doesn't take anytime to obsess over?
Most days I bake a white pita bread with hummus and sliced tomatoes or white mushrooms (or both).
And if I think my other meal for the day is good for LE I might sprinkle a little cheese on it.
I eat this a lot. I imagine I will get bored of it, just wondering what everyone else's go to meal was;)

a bean burrito with salsa but no cheese. sometimes with lettuce added after heating, sometimes not.

a bowl of rice, but i put sweetner in the water when its cooking so its sweet...I am lazy :happy:

Rice with mushrooms and a sprinkle of Parmesan cheese.

Matzo pizza with pizza sauce (very little), 1/2 oz. moz or Swiss, 1TB sun dried tomato. I usually have 2 or even 3 depending in my limits. Another one is 1 cup white rice with varying veggies, 21 seasoning salute from trader joes, and red pepper and feta dressing from whole foods. Light beer, trader joes jelly beans, and rice pudding have also been staples.

I guess I eat rice a lot also, I will put fresh cilantro in it and lime juice. I never thought to sweeten it instead. I think I would like that, kind of like rice pudding;)
Is Matzo something I would find at a regular grocery?
