I used to eat Salads everyday usually it consisted of spinach, onion, tomato, cucumber, chick peas, nuts, and avocado. Sometimes Id add cheese and croutons and chicken. Anyways I realize how high fat and high protein my salads were. I am trying to come up with yummy filling salads that are LE friendly. I am currently working on an Iceberg Wedge salad.
Iceburg wedge:
A big wedge of iceberg salad
goat cheese
Balsamic vinegar
a bit of Ranch dressing
-------------- I am missing something like bacon bits, pomegranate, berries, pecans etc. but theres are high fat.
What would you add to this salad to make it delicious?
