Im trying to get around 4000mg of potassium a day and I'm only getting about 2500 a day.. It already seems like I'm eating a lot of high potassium foods and still struggling... Im trying to get a lot of potatoes, orange juice, yogurt, smoothies.

Depending on how you're tracking it, you are probably getting more than you think. If you're tracking on My Fitness Pal, their potassium info is really unreliable with lots of foods listed as "zero" when really they have a lot.
Re potatoes - I know potatoes have a rep as a "blue" food but ALL they have going on in them is potassium, plus they are really calorically dense. You would be much, much better off having something like blueberries or nuts or meat or dairy that has a lot of potassium plus a lot of other nutrients. I hate to see blue swayers filling up on starchy foods for no reason because they are often relatively low-nutrient and fattening.

Try Naked Juice and Coconut water. I use full-fat milk and coconut water in my smoothies- mostly shakeology smoothies, but it's pricey. Amazon is having a pretty good deal on coconut water.
I actually haven't eaten tons of potatoes but I have a banana in my smoothie, these drinks allow me to 'spend' my calories in a more smart way.
