The pH of the tract the egg travels changes 4-5 times on the way to your uterus. It is hard to say if or how much impact pH has on the sway as a whole. Diet has been studied in animals and humans and the proportions of calcium/magnesium to sodium/potassium have the most evidence to support swaying. Whether or not pH is actually changed within you where sperm and egg meet is difficult to say just due to having any scientific evidence that pH has an effect on the sex of the baby.
I can tell you that with HT, eggs and embryos are cultured in a perfect pH of 7.0 and statistically, we end up with a 50/50 gender ratio come transfer day. IF there was a lot of data to support pH changes, I am sure the embryologists would be using it to help the GS patients but there are many studies on changing pH of embryos and the detrimental effects it has on them.
Diet is key- it certainly may alter the pH of secretions but your body will always maintain the pH it needs to survive and have the organs function properly.
