I am doing the LE diet and so far I have only filled them with cucumber and cottage cheese, but would be interested in some more ideas, especially heated up.

Hummus and cucumber is AWESOME. I eat it all the time and I am not even swaying.

i melt low sodium swiss on them sometimes...
I made amazing vegetarian tacos the other night. First of all, use corn tortillas if you can find them - the ones I have are sodium free!
This recipe is nice as a treat once in a while, since it contains some ingredients that we shouldn't have on a daily basis.
Here's what I did:
Sauteed 1 leek and 1 yellow pepper in 1 T unsalted butter until soft, added 1 cup no salt added canned black beans, 1 cup no salt added canned tomatoes, 1 tsp chili powder and a bit of cumin + a bunch of fresh cilantro, and let it simmer. Then I heated my tortillas and filled each with about 2 TBSP of the mixture, some cheddar cheese (one 30g serving will top up to 3 tacos if you use it sparingly) and fat free plain yogurt.
Soooo yummy and I had tons left over for another supper or two. I was able to eat a generous portion and still keep well within the guidelines for protein, sodium, and calories for the day.
i do a little white rice and sauteed peppers (i add some type of spice while cooking) and a dap of light sour cream.
I liked Cucumber, a few Sugar Snap Peas, a few slices of Red Bell Pepper, 1 sliced hard boiled egg, and 1 tbsp of Seseame Seeds.... DS1 ate one too and he is my picky no eat veggie boy. I did have a friend make a ton of NO fat and Sodium torillas for me and it was worht because they tasted so much better then store brands.
I do something similar w/mine. I also mix the plain yogurt w/a little bit of chipotle powder and if I'm feeling like I need to cheat a bit, I sprinkle a smidge of onion powder in there as well. Not brave enough to put garlic powder in there but when I'm not swaying, I do and it's divine!
Another thing to try:
Grill some zucchini (courgette), yellow squash and sliced portobello mushrooms. Put them on your girl sway-friendly tortilla and top w/just a bit of parmesan or pecorino-romano cheese.
I used to use them as a Pizza base - I'd roast some veggies and add some low sodium tinned tomatoes, pile it on top with some cheese and melt it all under the grill, which made the edges of the tortilla wrap crispy too. Ooh, I could eat it now!

Out Of The Blue, are the portobello mushrooms okay then on the LE diet as I thought we can only have "normal" white mushrooms. Also how about chillies?
Zanacal, so you just use one tortilla and add the toppings? As you are in the UK too, where did you get your low sodium tomatoes and what cheese did you use? Congrats on your pink news!
