Yes
^^^ provided you are doing JUST LE Diet. People who are trying to mix and match the diets will probably not want to use peanut butter as supposedly it doesn't have the right blend of minerals in it or whatever.
I got my daughter eating it frequently after giving it up and getting my 4th boy so that shows about how well that idea works. :)
Thanks! Yes, just LE for me, that's basically what I was doing when I conceived my daughter except that I did snack a bit and have a small serve of ice cream most nights.
I just find it a super easy, PCOS friendly source of protein :)

:agree: although for anyone with moderate to severe PCO, they may not be able to enjoy it as much because of the carbs. But most of us can (even with mild to moderate PCO!)
I don't actually have PCOS rather am insulin resistant but I find the fat in it keeps sugar levels stable :)

:agree: As long as you can tolerate it ok then it's fine. I just didn't want people who can't tolerate it (or at least not much) to read what I wrote and take it to mean that it was an endorsement for everyone when it isnt'. :)
I have been thinking about protein sources - is Seitan a good vegetarian option? It's fairly high in sodium (which honestly I am not watching as being able to salt food makes it much easier for me to stick with LE). I cannot have tofu so I was wondering if this would be OK instead?
Most of us have totally given up on the sodium thing and our results have only gone up since we did! No worries about that.
Seitan is fine for a pink sway. It is carby (since we were talking about your insulin resistance before, just wanted to point that out) but as long as you're keeping an eye on that then it's ok.
