    girl friendly risotto recipe?

    just collecting some recipes - I've never actually made a risotto before. Can anyone suggest a good one? thank you

    Hi rainbow, I love risotto and it's the only thing I'm not sick of eating yet!!
    Fry a leek in tiny splash of corn oil until soft, then fry risotto rice for a few minutes until it starts to look clear. Add a little white wine if you want more flavour at this point, let it absorb and stir continually. Then add stock (I make this by boiling a leek or whatever and using water) or boiled water if you can't be bothered!! Add the stock gradually and et it completely absorb before you add another lot. This bit takes about 20 mins. Add knob of butter and leave with lid on for couple of mins. Sometimes I roast a vegetable to go with it. Hope that all makes sense!

    I think I'll try this at the weekend - standing at the hob for 20 minutes keeping an eye on it isn't really possible with the monkeys all running about! I bought some Heinz baby vegetable stock ****s with only a trace of salt in (I think!) and I used to get Kallo low sodium ****s from Holland & Barrett too.

    Awesome thanks for sharing!

    This isn't risotto per se but I used to make an asparagus rice dish just by making reg. steamed rice with half broth and half water and then as much asparagus as I could get my hands on!

    I gave it a try! baby stock **** (vegetable flavour), butter, mushrooms, courgette - it was surprisingly nice. Could have done with some more salt... but never mind

    Lol, I imagine you get used to that! Thankfully I don't salt food anyway so I don't notice that part. I still haven't tried a Risotto but I did buy the ingredients!
