Is this normal?? I just got my period on CD 20. I’m usually more like 26 days.. does this happen with being on the LE diet? Or maybe just a fluke?

Also wanted to add that I’m not exercising. I don’t closely track everything I eat but I did for a while and was usually in the 1500-1800 calorie range. 30-40g fat and 30-40g protein.

It's not "normal" per se but it is something that can happen on LE Diet.
You are below limits on protein (it's 40-50 g for most people, anyone with PCO-tendencies, over 40, breastfeeding, is very tall, or has more than 30-50 lbs to spare should boost to 50-60 g) and bare minimum on fat (you can go up to 60 g.)
My recommendation is to drop fiber if using it, up protein to safe range, and fat levels too, by adding in a serving of full fat dairy every day, 4-6 whole eggs a week, and a serving of salmon weekly if you like it, and red meat if you don't.!!!
