I normally have evening meal at 5pm so if I wake up at 7am - that's a 14 hour fast...I read you don't want ppl to wait more than 16 hours so does this mean I should have a brekkie when I wake up / within a couple of hours OR is it best to have a later dinner and eat closer to 11am/12pm?

Just go 12-16 hours. Whether you do that by skipping breakfast or by eating dinner earlier is entirely up to you.
