Ok ladies, I need some help. My weight loss has seriously slowed down, and I still have a lot of weight to lose. Our first attempt is next month, and while I know there's no way I'm losing the last 30 pounds or so I need to lose, I'd still like to lose SOME more weight before then.
I seem to not lose weight well with the typical empty carbs and white/starchy things that most of you eat on the LE diet. I don't have PCOS, but Atomic suspects that I might be a touch insulin resistant and perhaps that's why I don't lose weight well with those things in my diet. I need to switch to more fruits and veggies, but other than including some apples or cucumbers into my diet, I'm kind of stumped as to how to include them in more actual dishes.
What I've done with fruits and veggies so far....just eating a raw apple with my meal, having cucumber slices with hummus, a bowl of strawberries with Equal sprinkled on top, stir fry veggies with white rice (maybe I should switch to brown rice? I'm worried it's too nutritious, though). That's about it. I'm not very creative when it comes to making LE-friendly fruit/veggie dishes.
Also, are smoothies okay? What if I made a smoothie every day for lunch, with frozen strawberries and frozen banana, a splash of rice milk, and maybe some powdered fiber mixed in?
Please....share all of your yummy and creative ways you include fruits and veggies into your LE diet plan. I need more ideas!

Strawberries and kiwis are good mixed together! Grapes and melons are a good mix too. I wasn't too creative and pretty much ate strawberries with fat free cool whip...yumm....all the time!

I had a very tiny amount of pasta tonight with it in stired in mushrooms and courgette ( zucchini ?) as well as some broccoli and had it with a side salad of ice burg lettuce and a couple of cherry toms. U could add in any veg you want - the more veg u add the less pasta u need :-)
Also the curry is lovely which is potatoe and pea but i have made the same paste and just added broccoli cauliflower peas and mushrooms. Basically any veg at all even those u dont like as once the curry sauce is on them they taste like curry anyway !! Great way to get it into you !!
How about a stir fry with some of those low fat rice noodles ?

My favorite meal is white rice, 1/4 cup shredded cheese and steamed veggies like broccoli or asparagus. Just mix it all together in one bowl, the cheese melts and everything tastes so good together!

Hi sweetpea, what about vegetable tortillas....very easy to do
Mushrooms, leeks, aubergines, zucchini and some tomatoes...everything cut in small pieces and cooked until tender. Then just heat a tortilla and put mixture in...very easy and with lots of veggies...you can also add some couscous in it.
For dessert, the other day I boiled some whole pears (peeled) in some water, added 2 teaspoons of sugar, a teaspoon of ground cinnamon, a teaspoon of ground cloves, put them to boil until tender (about 10-15mins). Eat while hot and just add a tablespoon of low fat custard, or if you prefer yoghurt...really good and very very easy to prepare in no time!

Thanks, dreamingpink! Actually, we just did a variation of the vegetable tortillas that you described above the other day - very yummy!
I'll have to try the boiled pears this weekend - they sound delicious!! Thanks for the recipe!
