I feel the same farm girl, I didn't eat any eggs in the few months before both my DDs were conceived and I ate a lot of them when TTC DS.
So when I start HE properly probably next summer. ( I know, I am an obsessive planner) the following will having at least 1 of these per day.
Boiled/scrambled/fried eggs for breakfast at weekends
Egg mayonnaise salad and sandwiches, quiche ( I have a lovely spinach & feta one with 5 eggs and pine nuts) and cold frittata with salads for lunch
Dinner options.
Sticky egg rice as a side to lentil dhals and chickpea currys
Pizza omelette
Greek omelette
Egg Burrito
Savoury clafoutis- cheese, tomato & olives
Egg pasta with the eggy sauce
I have never had devilled eggs before. So I am going to give them a go too. I just need to have a variety as if I eat the same thing everyday I will end up eating less.
