Wine is counted for calories. Whatever type you prefer. Some people like to avoid red wine since it has somewhat more nutrition than white and rose but we have still had good results with red.

All those are low carb vegetables.

It's fine to eat quinoa within limits.

All fruits are high carb (so count calories but not protein or fat.). High carb veggies are potatoes, sweet potatoes, sweet corn (maize), carrots, beetroot (carrots are pretty low carb if they are raw, though) Anything sugary tasting or starchy.

That lasagna is fine, you'd not count anything in eggplant, pepper, mushroom, spinach, or basil.
