I really need to be eating more calories/fat/protein, etc. I'm still BF, and don't want to lose too much weight either as I only have about 10lbs I can lose in total before I'm underweight...

What about humous? That has a good amount of fat.
I eat pasta/rice for both lunch and dinner which I find gives me a few more calories. Also full fat pop has been recommended to me. I would eat proper cake too, not ww, it will probably have the same protein but more calories and fat. You definitely need to eat more if you don't want to lose too much weight

You're lucky you don't like cheese, rainbow - cheese is my biggest weakness, and it's so high in protein I can barely have any on this diet!
You're right that you're not eating enough, though. One of my biggest regrets is that I didn't start out this diet eating to the maximum limits - I was regularly eating only 1000-1200 calories per day at first and I lost weight way too quickly. A couple of girls on here lost too much weight and stopped ovulating (our own lovely swish included).
Do you like sweets? If so, I'd add some more. Maybe full fat ice cream?
I also think in your situation you might want to eat 3 meals a day (atomic says this is ok on the diet). Still skip breakfast, but fit the 3 meals into the hours between noon and bedtime somewhere. I found I was never able to give up my nighttime snack, so I decided to consider it my third meal even though it only consists of snackfoods and sweets (all within the limits, of course). An extra real meal a day could really help with your totals and won't require you to overstuff yourself at each sitting.

I would have a pudding after each meal rainbow (and I do!). These are the treats I can think of and most of them have calories but not very much protein and sodium. (Btw, where did you find egg fried rice with such low sodium?!)
- Mr Kipling cakes (I have Viennese Whirls, Raspberry Slices and Mini Battenburgs)
- Jam Tarts (the Tesco cheap brand ones are quite good)
- Bakewell Tarts (same as above)
- Biscuits! 2 custard creams gives you about 130 calories and not alot else.
- Sweets - There are 20 calories and no other nutrients in a Fox's Glacier Fruit so you could suck a few in the evening for a snack and sneak in another 100 calories easily. Tutti Fruttis - about 180 calories (I think!) in quarter of a big bag.
- Snack-a-jacks
- Crisps! There are quite a few which only have 100mg or so of sodium in them. Hoola Hoops are ok. There are also Weight Watchers and 'Velvet Crunch' but these have less calories as they're aimed at dieters.
- Ice cream! I like the mini tubs of ww toffee and chocolate ice-cream and the toffee and honeycomb sundaes. Yum!
- Meringue nests and a bit of cream or yogurt with your berries.
- Yogurts. I like the Activia ones in the little round tubs. They're not fat free but they're less than 3% fat and have around 120 calories, 6g protein and very little sodium.
If you don't like cheese how about having a bagel with no/low sodium butter or spread and jam or a tablespoon of peanut butter? I've found a couple of Tesco Light Choices ready meals lately which have worked out fine. There's a pasta in cheesey sauce with peas and broccoli, creamy mushroom pasta and tomato and cheese pasta bake.

Oh, were you only eating 2 meals? Yes, definitely eat 3!! I find that because I eat lunch early (I often have it at 11 or 11.30 because I can't make it until 12!) I want dinner early (sometimes at 4) so then I have supper during the evening (which, like mocha said, is often just snacky foods but I eat them in one sitting so it's not like I'm grazing all evening and keeping blood sugar levels elevated over a long period of time).

I agree on the 3 meals thing, that's something I'm going to do too

Here's today for me:
7am: coffee
12pm: 2 homemade low fat apple muffins (veerry yummy!), 1/2 cup rice with a bit of yogurt and balsamic
2:30pm: coffee (it was a bad night - the kids were up a lot)
5pm: leftover vegetarian burritos - I had one on a real tortilla and two on my tiny sodium-free (tasteless) corn tortillas, 2 fruit creme cookies
8:30pm: frozen strawberries warmed in the microwave then mushed up on top of low fat vanilla ice cream. This was sooooo yummy!, Mike & Ike candies, peach, 1/2 serving of low salt chips (I couldn't really afford the sodium, but I needed more calories and didn't want anything else sweet)

well I've sort-of been having 3 if you count my supper of coco pops as a meal! I'll try and make the other meals more substantial today with puddings then.
the bit that worries me is that I'm eating so much at each meal I don't really feel as if I'm simulating being starving and in hard times lol
thank you for all of those ideas, I will investigate those light chocies meals too (don't forget to add those to the UK food ideas thread!) as there are days when I'll be working when I won't get home until 6pm and my DS starts bedtime at 6.30pm so I'll need a quick fod
