Aww how nice of your Dh! I hate to tell you this but my Dh has zero issue. I am sure the peppermint helps but mostly he has zero gag reflex and that allows him to down almost anything. Right before he drinks it he says for my baby girl and throws it back!
Has your DH mixed it with anything like juice? Did you already mention that? I can't recall.
Really hoping the stuff works, how great would that be if it were as simple as swallowing some gross liquid!

We'll be doing HT in August, I wonder should I have my hubby taking pepper mint and also olive leaf to increase our XX ratio? Is pepper mint a good idea?

I have zero info on how Olive Leaf sways, so I totally defer to atomic on that. But I have had some experience with Olive Leaf in general, as my mother has a background in herbal healing. Just a couple of things…
Not all supplements are created equal. Some companies have more potent stuff than others (just due to growing and drying procedures). I don’t know about the liquid, but the most potent pill form that I know of is Life Extension, EAST PARK RESEARCH. It’s more expensive, but very strong stuff.

Also Olive Leaf can significantly lower blood pressure. This may not be an issue for some people – especially if your dh tends toward the higher blood pressure range as it could actually be helpful! – but if your dh has low blood pressure issues at all, I’d be really careful. Myself, I have low blood pressure, and after one does of this stuff, I get dizzy and black out from my blood pressure going down too rapidly. So, just watch for any symptoms of blood pressure going too low, and if he complains of being dizzy, stop using or consult your doctor.
Oh, just an aside, it’s also a fantastic immune system booster. (Which is how I plan to get my dh on board with taking it! Lol!) It’s has natural anti-viral, anti-bacterial, and immune system boosting properties. My mother swears by it in cold and flu season.

The oleuropein... Do we want more or less of it? Does anyone know? I was reading for supplemental reasons to go with the higher percentage, but wasn't sure if swaying wise if we wanted the higher percent or not...

no not many so far, 6/6 got girls plus 1 who never came back to update and several others who are pregnant but don't know gender yet

6 for 6 is pretty good
obviously we can get girls with dh taking it. My DH started today his bottle says 5mls 2 times a day... he hates it.
