    First day back on the diet after 2 months off. Did horribly bad!

    Skipped breakfast by only 3 hours but had peppermint tea with equal

    Snack- low fat bbq chips and salt free pretzels and a diet root beer

    Lunch- a cup of sugar free strawberry milk and salt free pretzels

    Dinner- I was starving and made chili for my family and ended up eating corn chips with chili beans and cheese. SO BAD! More diet root bear.

    Okay so for today....

    Breakfast- peppermint tea and 3 packets of equal

    Lunch- low fat vanilla yogurt with cinnamon, sugar free pears in a cup, 19 salt free pretzels, diet root beer, and a Starbucks light frappuccino.

    Snack- Peppermint tea/soda and a choc chip cookie

    Dinner- Pasta with veggies (2 cherry tomatoes, 1 whole mushroom, a handful of green beans, a tiny bit of leeks, a few slices of green peppers) with 1/3 cup of plan yogurt and a little balsamic vinegar. 1 cup of sugar free strawberry milk and 8 salt free pretzels.

    This is my day for today:

    6AM
    coffee with half & half
    4 oz of whole milk (my toddler made me drink it LOL)

    1st Meal - 10:30am
    4 oz LF yogurt w/1 tsp jam
    caprese salad (5 leaves basil, 2 oz halved cherry tomatoes, 1 tsp balsamic vinegar, 2 oz mozzarella)

    2nd Meal - 1:30pm
    4 oz LF yogurt w/1 tsp jam
    3 oz sliced mushrooms sauteed in 1/2 tbsp butter with 1 oz melted swiss cheese stuffed in 1/2 whole wheat pita (this is so yummy!!)
    1 matzo with 2 tsp light mayo

    Dinner - 6pm
    1 cup green beans
    3 oz sliced green bell peppers
    3 oz sliced peeled zucchini
    1 cup cooked corn pasta
    lowfat mock hollandaise sauce (I will be posting this recipe tomorrow if it's any good!)
    1.5 oz mixed greens with 2 tsp homemade oil/vinegar dressing

    I will probably add some wine tonight to beef up the cals and potassium.

    Cals 1227, Fat 51, Carb 143, Protein 58, Sodium 565, Potassium 2229

    Haven't made it yet - dinner is in a couple of hours, but I will definitely let you know! I have high hopes for it - it's an eggless low-fat hollandaise sauce made with cream cheese... YUM

    Peppermint tea with equal when I woke up

    2 hours later-

    1 cup of fat free vanilla yogurt with cinnamon, 1/2 slice white toast with strawberry jam, 19 salt free pretzels, diet mountain dew, and 5 Cheetos (my kids were eating a few. woo that was hard lmao. I wish I didn't now though.).

    Ugh! Have had a horrible day so far. We got stuck out running errands around lunchtime and had to stop somewhere to eat... and the only thing close was Mexican. I was really good and only ate 7 chips, I ordered some rice with a side of fajita veggies and just a little sprinkle of cheese (and just happened to have some low-sodium salsa with me, score) and thought I did pretty well but added it all up when I got home and I still clocked around 950mg of sodium boo.

    Of course, today is St. Pats and we are going to a friend's party tonight, and she insists that I eat her corned beef and cabbage! I have to figure out a way to decline the food without hurting her feelings...

    3/19/12-

    Breakfast- Peppermint tea w equal / Diet caff free Mountain Dew

    Lunch- bowl of salt free pretzels, sugar free vanilla pudding, small taco salad (lettuce, cheese, light sour cream, tabasco sauce, and 2 wheat tortilla shells crunched up), and diet caff free Mountain Dew.

    Snack- peppermint tea with equal

    Dinner- This I went over what I wanted to but I was really hungry..... We had tacos for dinner. I had 2 soft and 2 crunchy wheat tacos since they were lower fat and lower sodium. I filled them with reduced sodium pinto beans, white rice, light sour cream, a little shredded cheese, salsa, and veggies (1/2 a small peeled squash, green peppers, and 2 mushrooms cut up and cooked in butter). Then had 3 mini sugar free vanilla cupcakes. Bottle of water.

    Snack- peppermint tea with equal.
