Ok so this is just a few days worth, but am I on the right track?

Lunch - Bowl of yogurt with blueberries and handful of granola
Dinner - small bowl of salad with lite ranch & a mixture or sliced sweet potatoes, apples and baked in maple syrup, few bites of watermelon, lemonade with dinner
Late Night snack 9 ish: small greek yogurt with honey
Tuesday:
No food till noon (coffee with cream and splenda)
Lunch: Whole Veggie Sandwich (eggplant, zucchini & goat cheese), 3 twizzlers
Dinner: Small bowl of pasta with butter and cheese, lemonade with dinner
Wednesday:
No food till noon (chai latte, I know not the best, but up all night with 2 year old and ear infection!)
Lunch: 1/2 veggie sandwich (same as above), 2 twizzlers, some blueberries
Dinner: (will be) veggie stirfry and brown rice
Is snacking at night ok?

You can have 2 or 3 (or even 4, if that is what works for you) meals a day on LE Diet, look at them as meals rather than snacks. Snacking (eating all day long every 15-30 minutes) is not allowed. Eating 3 meals is fine as long as you delay breakfast in the morning.
I really honestly can't say how you're doing on the diet - your food choices are excellent but without knowing portion size, calories, protein, fat I can't say for sure. You need either 1200-1500 cals or 1500-1800 cals depending on your physical requirements, 40-50 g protein, and 25-60 g fat (20-30% of your day's calories from fat, so this can vary as well.)
Also be sure you're getting 2500-3500 mg potassium.

Thanks Atomic! I know I am keeping portions low because I am usually really hungry. I also try to eat a mini meal, like yogurt before bed time or pop a bag of no salt popcorn.

I'm equally concerned that you're eating ENOUGH! Starvation is not an option.
