I don't think things like that matter at all. We've really found over the years that it's calories, protein, and fat that seem to be the heaviest hitters and not even any nutrients (although we still avoid heavily fortified foods, for example) You still need some nutrients coming in to remain fully fertile, so we also don't want to get terribly depleted in anything. We're aiming at reductions, not starvation.
No, you don't need to restart the diet (and in fact PLEASE DON"T) We have always included cheating in the LE Diet for a variety of reasons - our sanity, not having to stress about other people's reactions, and giving our body a chance at things we may be low in, and reducing cravings - and we know for a fact that cheating doesn't undo the diet. In fact, people who were on diet 2-6 weeks (even tho these people were nearly always quite strict) got by far and away worse results than those on diet 12 weeks or more, even though these people did cheat along the way and relaxed over time.
