If you eat more than 30 grams, no worries. There's no law that says your body can only digest 30 grams at one sitting every time, that's just the average number and so it's something tangible to shoot for. It's very probable that at some meals you can digest more, sometimes less, and it prob. varies from day to day and between individuals.
Whatever you eat that your body can't digest, you just excrete it in the usual manner!! ;)
