Honestly, it's hard to find low sodium tortillas. When I looked, most seemed to be in the 200mg range. You could also try pitas instead. I found that middle eastern style pitas - the big ones - can be as low as 100mg per pita and are more filling than a tortilla. I also used them as bases for pizzas on occasion.
Classic alfredo sauce would definitely be too high in sodium, but once in while I made a sauce out of a little fat free cream cheese and milk as a treat. My stand-by, though, was low fat creme fraiche mixed in with my pasta and sauteed zucchini, mushrooms and leeks, with a full serving (30g) of grated parmesan on it. It was my big splurge every day - that parmesan alone was 10mg of protein, so 1/4 of my total for the day, but it was worth it!
