1) Are you exercising??? If not, you should, that will help. (sorry I know we talked about this already, it's just hard for me to keep everyone straight. If you're gaining weight and it's mostly muscle, I would celebrate and say hallelujah.
2)Yes, your metabolism can change, esp. if you add more muscle than fat. You'll burn more cals all day long with muscle.
3)You can def. drop down to 2 snacks a day - have breakfast first thing, then a midmorning snack, then lunch, afternoon snack, and a later dinner...or else just an earlier dinner and then a bedtime snack, whatever works with your schedule. Make very sure you are doing both proteins and carbs at every meal and snack though.
