What's the thinking behind the low sperm count idea anyways?

We don't know, but low sperm count has BY FAR the most hard, irrefutable scientific evidence supporting it. Way more than testosterone.
I know it's bizarre to do something when you're not sure of the reasons why, but it's like doctors washing their hands before they knew was germs were (which really happened). We can see that low sperm count sways pink even though we don't yet know why. So we aim for low sperm count and await the day when someone a lot cleverer than us figures out the mechanism.!!!
