My attempt Was tonight so I've not eaten too much for the past three days like 1200 calories ish but normally I'm at 1800! With pop tarts for dessert and cheese for lunch - I feel I've eaten so many cheese sandwiches I can't eat them
Anymore !
Sometimes I make my littlest son just plain butter on toast and it looks so lovely and simple and tasty but when I ate it tonight gosh I was like ' oh is that it?!' It looks better than it taste lol xx

So I just made the yummiest meal I have had in a while and had to share. I am doing the pcos version of LE so have to limit carbs mostly. I have been using Rye bread because it is much better for people with insulin resistance. I used a tbsp of a light version of country crock to sauté some mushroom and mini red and yellow peppers. Then I added another tbsp of the margarine and poured the egg over top and let it cook a while until firm. I put 1/4 c of crumbled feta on top and folded it over. I toasted 2 slices of the rye bread and then spread this dip I found over it. It is from Chobani and is made from Greek yogurt. It is the smoked onion and Parmesan flavor and has almost no fat, carbs and very low calories. This meal was delicious and so filling. Here is the nutrition info.
Also, I don't track sodium. I use it very sparingly but don't track it or I would go crazy. I mainly just keep track of calories, fat, carbs and protein. I apologize if I'm missing anything.

What's everyone having for dinner tonight? I've made Chilli Non Carne, with Quorn mince instead of meat. Will serve with a little rice

Here is the vegan fried rice recipe I use, it's a little spicy and so delicious! I don't pay attention to salt intake so the soy in this is fine for me. The Vegan Experience, Days 1 and 2: What's For Breakfast? | Serious Eats

So.......weekend was a bit all over the shop..... Had a few social events where there was cocktail food served...........How do you cope with these?!?!
Breakfast - hashbrowns, mushrooms and spinach with coffee (more like brunch given the time I got up!) I am liking the idea of hashbrowns for breakfast though!
I had a small bit of bacon yesterday and felt a bit blerh - I think as I have started to limit meat now if I have some I am not liking it.
Need to go shopping for supplies - but grabbed a green salad and a can of pink salmon for lunch today - had 2 coffees already today!!!

Atomic, this may sound crazy but I’ve been reading about moon phases… I have a ‘red moon cycle’ currently which I didn’t used to have. Meaning my period is coinciding with the full moon. From...
