    Dinner ideas for girl sway!?

    Hey girls! So I'm cool
    With breakfast and lunch but what to do for dinner? I'm ok with having a
    Small amount of chicken a couple of nights but what else
    For the other nights?? I want to stay away or at least limit potatoes. Anyone here making their own red sauce? That will help me
    Out as I can make pasta, baked zitti, lasagna ( LE styles). I feel
    If I go full vegetarian I will become a rice and pasta tarian. LOL. I can add veggies, a bulion soup and ice berg lettuce too I guess....

    Any advice for me? Probably swaying next month so wanna get myself
    On track asap. Have about 5 and a 1/2 weeks to lose some weight and get
    On a better girl diet.

    Anyone still bake the raspberry muffins, nutmeg yogurt scones, and the IG breads? I made those today as they are familiar to me and I figure it gives me
    Something else to eat.

    Oh and my dh likes meat. I can get away with cooking chicken though. He'll eat that! And he loved the IG breads an muffins I make. He eats them like crazy. Haha. He won't eat just plain pasta or bullion. He will eat a tasty pasta but not sure wjere to begin woth that Some nights I can make a separate dinner. But not always, with two kids, it gets tough.

    I made this really good pasta dish the other night.
    You take butternut squash and cut it into ****s. The thickly cut up some leeks (or onions if you want). Place all that on a baking dish and sprinkle with pepper and Mr.Dash.
    Bake in the over 425F for 40 minutes til soft.
    Then cook 1lb. pasta and save 3/4 cup of pasta water after draining. Add 8 ounces goat cheese and a little of the pasta water to the drained pasta and stir til the cheese is melted and creamy. Then add the cooked butternut squash mix to the pasta and done. You can top with some fresh cut basil, tiny bit of chopped walnuts and parm cheese.

    Its a nice dish if you are having guests over and have to make something without cheating on your diet.
    You can serve it with a cherry tomato and mozz. ball salad with some balsamic vinegar and fresh basil.

    Yummm PFP! That sounds really good, I'm gonna try that one.

    This is what we had tonight for dinner, all my boys LOVED it and it was mostly girl-friendly too (I saved up some sodium for this!) Warning - spicy

    Sauteed 4 oz white mushrooms, 1 green bell pepper, 1 large zucchini (peeled), 1 serrano pepper, 1 leek in Thai seasoned safflower oil (lemongrass and basil)
    Made a peanut sauce out of 1/4 cup unsalted peanut butter, 2 tsp brown sugar, 2 tbsp low sodium soy sauce (TJs brand only has 460mg per tbsp, the lowest I've seen!), 1/2 tsp minced fresh ginger, 1/2 cup homemade unsalted chicken stock.
    Boiled up some Thai Kitchen linguine-style rice noodles and served it topped with the veggies and peanut sauce. This made 4 servings.
    We've been big into peanut sauce lately, I made something similar a few nights ago too LOL

    This is a modified version of a "boy-friendly" recipe I used to make. I used a green bell b/c red bell peppers have a LOT more nutrients (including potassium). Safflower oil is heavy on the Omega-6, not so much on the Omega-3 (I think Omega-3 sways boy, and that's what is in canola oil and pastured butter, what I used to use.) And dropped the meat - I always used to serve this with chicken!

    Just wanted to add that I am excited about all of the new vegetarian recipes I've been trying (sorry, I am a total food geek) and I'm going to post some of them tomorrow... I actually have a few hours to myself (a rare occasion) for once and I am going to spend it working on LE recipes... I have a serious obsession/T problem evidently which I need to get under control
